How to Make Coffee Cake

I'm going to walk you through an easy coffee cake recipe that delivers a soft sponge and a delicious flavour.
If there’s one pairing that never goes out of style, it’s coffee and cake. Whether you’re hosting friends, planning an afternoon treat, or simply craving something comforting, a homemade coffee cake is always a winner.
Ingredients

200g unsalted butter (softened)

200g caster sugar

4 medium eggs

200g self-raising flour

2 tbsp strong brewed coffee (cooled)

1 tsp baking powder
For the buttercream:

150g unsalted butter
-
300g icing sugar
-
1 tbsp strong brewed coffee
Method

Preheat your oven to 180°C (160°C fan) and line two 20cm round cake tins.

Cream the butter and sugar together until pale and fluffy. This step incorporates air, giving your sponge a lighter crumb.

Add eggs one at a time, mixing well between each addition.

Fold in the flour and baking powder gently to avoid knocking out the air.

Stir in the cooled coffee until fully combined.
Divide the mixture evenly between the tins and bake for 20–25 minutes until golden and springy to the touch. Leave to cool completely.
For the buttercream, beat the butter until smooth, gradually add icing sugar, then mix in the coffee. Sandwich the cakes together with half the buttercream and spread the rest on top.
